apples to apple pie
Apple season has arrived here with abundance, so far I've made apple cake and apple tea cake and today they turned into apple pie. The secret for me is in the filling- chopping fresh apples into random sizes, this is so they cook at different levels giving a nice texture to your filling. Mix through some sugar, vanilla,cinnamon and melted butter with cornflour to create a delicious fragrant apple pie filling. encase in your favourite home made pastry and fill your house with sweet pie smells....mmm

easter buns
mix 7g yeast(1 sachet) with 1tblspn castor sugar and 1-1/2 cups of warm milk leave for ten minutes.
Add 60g melted butter 1/4 cup castor sugar , mixed spice and 2 cups sultanas
I egg lightly whisked and pinch of salt. I used 2 cups wholemeal and 2-1/2 cups of white flour
knead togther to nice smooth dough, break into 16 pieces and roll in balls place in tray and let rise for 20 mins
Pipe mix of 1/2 cup plain flour and 1/3 cup water to make crosses on top (my nightshift brain did this too early and roughly, and mine melted away)
bake in preheated 200 degree oven. 1/2 way through brush with apricot jam bake approx 35 mins till golden shiny tops and a wonderful spicy aroma fills your house.
Enjoy warm with fresh butter....veryjoe
