sugar and eggwhites

heat oven to 200 degrees and spread 300 grams of castor sugar on a baking sheet and heat until approx 100 degrees
Whilst the sugar warms whip six eggwhites until half beaten then pour in hot sugar constantly whipping egg whites and sugarr for 10 minutes at this stage you can add flavours- for the pink ones in the pic I added one teaspoon of rosewater and three drops of pink food coloring
Lower the oven to 160 degrees and spoon balls of your fluffy meringue on to baking paper lined  tray I bake for about 40 minutes and this gives me a crunchy crisp outside and a marshmallow interior
To serve  spoon whipped cream onto plate and top with meringue then with Turkish delight ice cream and cream and finish with a sprinkle of toasted crumbled pistachio nuts or persian fairy floss....sublime and veryjoe
